Chicken cacciatore is an Italian meal of chicken braised in a tomato-based sauce and often includes wild mushrooms. It is regularly referred to as "hunter design" as the word cacciatore means "hunter" in Italian. Why "hunter" design? One story is that if a hunter came home empty-handed, his partner would kill a chicken for the meal rather.
When I initially explore this dish, I made it without mushrooms or bell peppers, which are typically included in chicken cacciatore. Since then, I've pertained to enjoy the meal with mushrooms and bell peppers so have actually upgraded the dish to reflect those additions. If you choose it without one or both of these components, please feel free to leave them out. Many individuals likewise add green olives or capers which would be fantastic additions too.

This recipe calls for added wine, which is traditional. It does contribute to the taste. If you have a dietary limitation that prohibits wine, just leave out.

Method
Rinse chicken and pat dry. Weather the chicken pieces on all sides with salt. Heat olive oil in a large skillet on medium heat. Operating in batches so that you do not crowd the pan, position the chicken pieces skin side down in the pan. Cook up until perfectly browned, about 5 minutes, then turn over and lightly brown the opposite. Remove chicken to a bowl, set aside. Drain off all but 2 tablespoons of the rendered fat. If you have less than 2 Tbsp of fat in the pan, include more olive oil until you have about that much oil finish the pan.Add the sliced onions, bell peppers, and mushrooms to the pan. Increase the heat to medium high. Cook up until the onions are clear, and the mushrooms have quit the majority of their wetness, stirring regularly, about 10 minutes. Include the garlic to the pan and cook a minute more.
Add the wine and scrape up any browned bits at the bottom of the pan. Simmer till the wine is minimized by half. Add the tomatoes. Stir in the pepper, thyme, oregano, and about a teaspoon of salt. Test and taste to change. Simmer revealed for another 5 minutes. Location the chicken pieces on top of the tomatoes and onions, skin side up. Lower the heat and cover the frying pan with the cover slightly open.
Cook the chicken on a low simmer, turning and basting from time to time. Cook up until the thighs hurt, about 30 to 40 minutes.
